I got a guy that attackes my elbow on just about all balls till he gets a soft return.
I am thinking of doing a one step move and using my backhand to return these as I run out of time to rotate well for the forehand.
Any tips on how to cope with this attack.

Hi Maurice
You can step across to play a backhand. Just be aware of the space you create in the backhand corner when moving across. 
To avoid the player playing to your middle just be aware of where you are placing the ball. For example, if you are both right handed, play wide to their forehand to create an easier angle for you to turn the corner if they play to your middle.
